Summer-time Rice Salad

Growing up, my mom wasn’t the biggest cook. My dad did a lot of the cooking, however the few dishes my my did make, were some of the best foods I remember growing up. One of them (usually made at our cabin for a warm summer afternoon) is Rice Salad. She had a few different things she did to this recipe each time, which is great, because there is a lot of oppertunity to add/change this for a whole new taste. Well after getting the recipe from my mom, I set out to find the easiest way to make this delicious dish. Side note: Since I got this recipe down, I have made this twice a week at the request of my beautiful wife. She says it is now her favorite food.


  • 2 cups – Minute Rice
  • 1 cup – Frozen Green Peas
  • 1 1/2 cup – Shredded Medium Cheddar Cheese
  • 3/4 cup – Mayonnaise (I like to use Light Mayo)
  • 1 tbsp – Bon Appetite
  • 1/2 tbsp – Celery Salt
  • 1/2 tsp – Mrs. Dash: Garlic & Herb
  • Salt & Pepper to taste


  1. Sit out Peas to thaw during the rest of the preperation.
  2. In a medium pot, cook 2 cups of Minute rice according to the directions on the box.
  3. While rice is cooking, combine Mayo, Bon Appetite, Celery Salt and Mrs. Dash  in a large mixing bowl. Whisk together till seasonings are well blended into the mayo.
  4. When Rice is done (according to directions on box) mix it together with the seasoning mixture and green peas.
  5. Slowly stir together till the rice is fully coated, being careful not to mush up the rice too much.
  6. Place mixture in the fridge to cool down.   (read notes at bottom for serving warm)
  7. Once seasoned rice has cooled, pull out of the fridge and stir in shredded cheese.
  8. Salt and Pepper to taste.
  9. Store in airtight Tupperware until ready to be eaten.

To Serve Warm – Do not cool in fridge instead mix in cheese (it will melt a little), then salt and pepper to taste. Serve while still warm.

Optional Additions – I am thinking about trying this with one or more of these ingredients added to the mixture. If you make one of these, please comment and let me know how it turned out…

  • Chopped Pepperoni’s
  • Small Cubed Ham (like at a salad bar)
  • Chicken
  • Baby Shrimp
  • Switch out Cheddar for Pepper Jack
  • Halved Cherry Tomatoes
